Hello everyone, here I leave another vegetarian recipe, super easy to make, delicious and also full of vitamin A, B6 and C. Perfect for any type of diet, has a little fat, because you add cheese, but if you prefer they can Use Soy Cheese to make it healthier!
Serves 3-4
Ingredients:
4 cups zucchini, (use green and yellow zucchini)
1 can of 15oz corn kernels
½ cup chopped onion
½ cup of finely chopped tomatoes
2 tablespoons chopped cilantro
2 cloves garlic minced fimante
1 cup of grated cheese
salt and pepper to taste
1- 2 teaspoons of dried oregano
1 tablespoon of extra virgin olive oil
At your service:
Toast 2 per person
½-1 cup grated or chopped lechucha
1 sliced tomato slices
1 small onion slice sliced
Your favorite sauce
½ cup more grated cheese (optional)
In a large frying pan, over medium heat heat 1 tablespoon of olive oil and cook the onion for 2 or 3 minutes or until it softens a bit and put something transparent. Then add the chopped tomato and garlic, season with 1/2 teaspoon each: salt, ground pepper and oregano; Mix well and cook for 2 more minutes or until the garlic is aromatic and a little soft.
Add the squash and season again with 1/2 teaspoon more each: salt, pepper and oregano. Stir well, cover the pan with a lid and cook over medium heat for 6-10 minutes or until the zucchini are tender.
Since the zucchini are tender, add the corn and cilantro. (The pan will have a little liquid left by the zucchini.) Turn the heat up a little and continue cooking the zucchini on high heat for 2 or 3 more minutes or until the liquid has evaporated.
Add ½ cup of cheese, stir a little, taste the seasoning and add more salt if necessary. Turn off the fire. Cover the zucchini with ½ cup more cheese, let it melt a little and that’s it, you’re ready to serve.
Tomate your toast, add a little of the zucchini mixture, garnish with a bit of shredded lettuce, tomato, onion and you can also add a little more grated cheese and your favorite sauce to taste.
