The panucho is a dish in the kitchen of the Yucatan Peninsula in Mexico (covering the states of Yucatan, Campeche and Quintana Roo).

It is a small corn tortilla handmade, which is made to a stew made beans and then is fried in oil or lard . It is then decorated with lettuce leaves, stewed turkey or chicken meat, tomato and onion with previously seasoned salt and sour orange, avocado, carrot and (one pipián seed paste, chile and achiote). They can be served with an extra amount of hot sauce made from chile habanero.
