1 tablespoon fresh rosemary leaves
1 tablespoon fresh oregano leaves
6 large fresh sage leaves
2 cups cubes of French bread without rind (1-inch cubes)
1/2 cup of pepper stuffed with Spanish green olives
2 onions of cambray, stems only, chopped
2 tablespoons extra virgin olive oil
1 teaspoon balsamic vinegar
1/2 teaspoon freshly ground black pepper

Preheat the oven to 230 ° C and place the intermediate rack.
Place the herbs in a food processor and add the cubes of bread. Process until the mixture has the texture of fine crumbs. Transfer to a shallow bowl and finish with the food processor.
Combine olives, stems of the onions, 1 tablespoon of olive oil, vinegar and pepper in the food processor. Press until a thick mixture forms.
Cover each lamb chop on both sides with about 1 tablespoon of the olive paste. One at a time, press the coated chops in the bread crumbs, which cover both sides with a firm and even layer.
Heat the remaining olive oil in a frying pan over high heat, the pan should be oven resistant. Add the chops, in batches or using two pans if necessary, and cook until they begin to change color, about 2 minutes. Turn and cook for 1 minute more.
