- 250 g. finely grated carrot
- 2 eggs
- 1 lemon
- 70 g. ground hazelnut
- 90 g. ground almond
- 6 g. cinnamon
- 4 g. ginger
- 5 g. baking soda
- 2 egg whites
How to prepare your gourmet carrot cake from scratch
- Preheat the oven to 180 ºC and mix the carrot with the juice of half the lemon.
- Beat the eggs using a mixer, and when they are ready, add the hazelnut, almond, spices and baking soda.
- Add the carrot to this mixture, stirring well until smooth.
- Assemble the egg whites apart and add them little by little to the previous mixture.
- Put everything in a pan and bake for 40 minutes.
