200 gms of Bacon
½ sliced onion
2 cups chicken broth
3 cups of milk
100 gms Cheddar Cheese
Salt and pepper
The bacon is diced and fried. The lard bacon that was released is separated. In a tablespoon of the butter, the sliced onion is fried until it looks transparent. The diced potatoes (peeled or unpeeled) are added and covered with chicken stock. Cover and let it cook until the potato is very soft.
The potato with its broth and milk is ground in the blender to leave a very smooth mixture.
The cream is returned to the pot, seasoned with salt and pepper. Cheese is added, served immediately and decorated with fried bacon.
