Today I want to share with you one of my favorite breakfast recipes! It is my breakfast muffins recipe which I always use to serve my family on lazy Sunday mornings while most of them still are sleeping. With this recipe, you can prepare a good breakfast so even if you are not very hungry, I’m sure you will be able to finish all of them!
Breakfast Muffins Ingredients
- 1 tablespoon olive oil
- 4 tablespoons chopped onion
- 1 red bell pepper, chopped
- 1 Bundle of spinach cut into strips
- 20 sliced mushrooms
- 100 gms grated cheddar cheese
- 8 slices of bacon cut, fried and drained
- 9 eggs
- 4 tablespoons oatmeal
- ½ teaspoon baking powder
- 1 teaspoon salt
- ½ teaspoon of pepper
Preparation of the muffins
In a pan add the oil and add the onion and pepper with some lime slices, add mushrooms and spinach.
In the blender, add the eggs, oatmeal, baking powder, salt, and pepper and grind until combined.
Capacitors (small pieces of paper) are placed in 8 molds of rolls. At the bottom of each mold the fried vegetables, the bacon, a little cheese are distributed and on top, the egg mixture is emptied. Bake at 350 ° F or 175 ° C for 20 to 30 minutes.
