– 4 chicken thighs
– Three spoons of curry sauce
– 6 garlic cloves
– A white wine cup
– Juice of a couple of lemons
– Ground black pepper
– A few branches of rosemary
– Virgin olive oil
To make this curried chicken in the oven we will use on this occasion a good chicken thighs, although if you prefer you can use several chicken breasts instead, although the thighs are very juicy after baking, for that reason we use them in this recipe. First of all we will leave them well cleaned and washed with water, then we put them to drain so that they are dry well to salpimentar them and later to place them in a well extended container.
Then we squeeze two lemons and pour that juice on the chicken thighs, previously gluing to remove the seeds from the lemons that could have fallen into the juice. While we let the meat taste the juice we will peel the garlic cloves and chop them into thin slices and mix them in a bowl with a drizzle of virgin olive oil, curry sauce and a few sprigs of rosemary chopped, and remove Well to mix everything. We take advantage and light the oven to be preheated to 220ºC, so we will have ready to bake when we finish the preparation.
With the mixture above we will smear well the chicken thighs on all sides, so that they take the taste well, and when finished we place them in a fountain or tray suitable to put in the oven. Pour the white wine in the base of the platter or tray, so that when evaporating go flavoring the chicken. Once the oven is at the desired temperature we will put the tray and let the buns thigh for about 35 or 40 minutes, time that will vary depending on the oven and the size of the thighs.
The chicken thighs should look good on the outside and well done inside, so it is best to check the inside of one of them before removing them from the oven. At half the time of baking more or less we can turn them around to bake them equally, and to finish it is interesting to give a touch of grill a couple of minutes to make them perfect. We serve this hot curried chicken in the oven accompanied by some cooked rice or a garnish that we like, and you’ll see how rich you are and how you will enchant your diners.
