Arugula salad with figs and nuts
Prepare it like this:

1 can of 5 ounces arugula
½ cup chopped and roasted nuts
1 cup dried and chopped figs
¾ cup extra virgin olive oil
¼ cup balsamic vinegar
1 tablespoon Dijon mustard
1 shallot, peeled and chopped
1 bunch of Italian parsley, flat leaf and without stems
3 stalks of fresh and chopped chives

1. Beat all ingredients, except arugula, nuts and figs, until well blended, scraping the bowl at least once.
2. Stir the arugula with the dressing and cover it with figs and nuts.
