In this recipe, marinade is a type of salad dressing that combines wonderfully with zucchini. What about use it for any other vegetable such as chambray potatoes, carrots, etc.


½ kilo of Zucchini

5 guajillo peppers

1 pasilla pepper

½ teaspoon ground oregano

1 clove

pinch of whole black pepper

1 small piece of cinnamon

1 slice of onion

1 clove garlic

¼ cup vinegar

¼ cup olive oil

Salt to taste

Whole zucchini are steamed for 10 minutes to pre-cook them. They are removed from the steamer and sliced ​​lengthwise. They settle on a platter.

To prepare the marinade, the guajillo and pasilla peppers are cooked in boiling water for 10 minutes. The tail and seeds are removed. The clean chiles are added in the blender along with the oregano, clove, black pepper, cinnamon, onion, garlic, vinegar, olive oil, salt to taste and some of the cooking water of the chiles . Blend for a minute or until a very smooth sauce remains. It should be the consistency of a salad dressing. If necessary, dilute with water.

The marinade is emptied on the zucchini and decorated with the chopped olives. It is served cold or at room temperature
